French Bread Rolls



Ingredients:
  • 550 gr Bread Flour
  • 1,5 cup Warm Water
  • 10 gr dry yeast
  • 2 tbsp sugar
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 1 Egg white+Fresh milk

Method:

  • In a big bowl, mix water, yeast & sugar and stir it well, let it stand for 15 Min (until the yeast bubbled or dissolved)
  • add oil into the yeast mixture and then add half of the flour. Stir in the remaining flour then remove the dough from the bowl, knead until smooth and elastic.
  • put the dough back in the bowl and cover with damp cloth. Let it rise in warm place and the volume get double for about 60 minutes.
  • deflate the dough and put it in floured surface and divide the dough into 16 pcs, form as you like.
  • preheat the oven into 200C
  • brush the dough with egg-milk mixture, then bake for 20 minutes or until golden brown

Brussels Sprout with Cream



Very simple, quick & healthy!

What you need (for 2 persons)
  • 500 gr Brussels Sprout
  • 3 Shallots, chopped
  • 30 gr Butter
  • 100 ml Vegetable Stock
  • Salt & Pepper
  • 100 gr Creme Fráiche
  • ground nutmeg
  • 2 tablespoon chopped parsley

Method:

  • Wash & clean the brussels sprouts, remove the dark green parts, then make a cross in every stalk of them.
  • Heat the butter and then add shallots & brussels sprouts, stir it well for 5 min.
  • add vegetable stock and salt, stir well and then covered the pot, let it cook for 12 min (use medium heat)
  • then add creme fráiche, season with ground nutmeg & parsley
  • serve it warm

Telur Balado Hijau

I got the recipe from Mbak Esther in Abu Dhabi, the master of cooking ^_^

What you need:

  • 6-8 boiled eggs
  • 8 green chillies
  • 2 green tomatoes, cut into 4 or 6
  • 1 big onion
  • salt & sugar
  • 75ml stock
  • 1 lemongrass
  • 5 kaffir lime leaves
  • oil


How to make it:
Mix chillies & tomatoes, then use food processor to make puree.
Heat oil in a pan and then saute the puree, then add egg, leaves & lemongrass. Season with salt and sugar. Add water and let it boil, taste it and add suger & salt if it's needed.
Serve with rice! Delicioussss

Chocolate Buns

Again, Mbak Retno's kitchen inspired me to spend my day in the kitchen and baked these buns. It was fun to play with the dough and made some cute forms...heheh. I made the filling from home made choco paste from happy home baking. These buns are really moist :-) . Thanks Mbak Retno!
Ingredients:
  • 500g bread flour
  • 100gr mashed potato powder (dissolved with 200ml hot water)
  • 75g sugar
  • 1 tsp salt
  • 75g margarine+25g butter
  • 150ml warmed milk
  • 7gr dry yeast
  • 2 egg yolks + 1 egg yolk (for the topping)

Choco filling:

  • 1 egg white
  • 20gr all purpose flour
  • 50g sugar
  • 80ml milk
  • 18g cocoa powder
  • 10g butter
Method:
choco paste:
  1. mix flour, sugar & egg white using whisker until dissolved
  2. heat the milk until simmering, then add the cocoa powder, stir it well til is incorporated into milk
  3. add egg white mixture into the cocoa mixture and stir it until thickens (use low heat)
  4. add butter in and stir until incorporated
  5. remove from the heat and let it cool
Buns:
  1. mix all ingredients in mixer bowl except salt, knead using speed 1 for 5 minutes, then add salt, change the mixer speed into speed 2, continue kneading until you get elastic & unsticky dough
  2. Place the dough in a big bowl and cover it with damp cloth, keep it in warm place and let it proof
  3. punch the dough to release the gas and divide the dough ( make each dough into 60-80gr) fill each bun in with choco paste then form each dough.
  4. preheated the oven into 180C
  5. brush the dough surface with egg yolk, then bake it in the oven for 30 minutes

Bakpao (Steamed Dumpling)


It never crossed my mind to make this dumpling by myself, I thought it was so complicated but I was wrong. It's easy to make ^_^ and finally after in such a long time I can eat my fave food again. Thanks to Mbak Retno for sharing the recipe. I made change for the filling, because I forgot to soak the mungbeans and the dough was already done & raised, so I substitute it with nutella and cheese. Great taste!!

Ingredients:
500gr All purpose flour
1 pack. dry yeast
2 tbsp cooking oil
1/2 cup sugar
1/2 tsp salt
250ml warmed milk

Method:
- mixed all ingredients in mixer bowl then knead it well & can be formed & not sticky.
- cover the bowl with damp cloth and keep it in warm place for 1 hour or until the dough rise in double size.
- punch the dough and then divide it into 12 balls, then fill each balls in with nutella or cheese, then you can shape it as you desired.
- Steam the dumplings for 20-30 minutes

Green Rice (Mexican)

This green rice has become my new fave. food ^_^, the scent of green bell pepper & pepperoni make the taste really sensational. I added some ground beef on the rice and it was so tastyyy.(the original recipe didn't use meat at all) As I didnt want to spend so much time in my kitchen I decide to change the cooking mathod. Actually, the way to cook it is the same as risotto, but I steamed and friend the rice instead. And it turned really well ^_^. But if you have so much time to spend in your kicthen then you can use risotto method.
It's a good choice for one dish meal..(esp. when you are lazy to aty too long in your kitchen)

Ingredients:
175gr long grain rice
1 pc green bell pepper
3-4 green peperonies
6 garlics, unpeeled
2 onions, unpeeled
1 bunch fresh cilantro
250ml vegetable/chicken stock
200gr ground beef (optional)
80ml olive oil
salt & pepper (generously)
a bit water

Method:
- Grill & bake green pepper, peperonies, garlics & onion until brown or a bit burn, then set aside, let it cool then peel the skins out.
- In a food processor, mixed bell pepper, peperonies, garlics, cilantro & onions then add the stock in, make into puree, set aside
- Heat oil in a pan or pot, then add the ground beef, stir it until half done then add the rice, saute until rice getting brown, then pour the puree in
- Keep stiring the rice until well blended, add salt & pepper, then stir it again & let it simmer
- add a little bit water when it becomes a bit dry (always use medium-low heat), then stir it once again until the water is absorbed & almost done.
- Remove the rice in a baking dish then add a little bit water or stock, steam it for about 25 minutes or until the rice is really done.
- After that, heat the pan without oit, then fried the rice shortly
- Serve it warm

Hokkaido Milky Loaf

I was doing some blogwalkings and found nice blogs that keep me sitting in front of my PC the whole day. I saw the picture of the bread and checking the recipe...and I can't help my self not to bake it. And I'm very happy & jump for joy when my I took my loaf out of the oven, the result was so wonderful, this bread is really moist even until the next day. The texture is really soft like cotton. When I took the first bite..Ohhh myyy, it's really delicious, even my husband likes it too, I guess I bake this bread more often ^_^.
Thanks to Happy Home Baking for the kindness to direct the readers to the recipe and thx to Angie for sharing the recipe, I will visit you both very often :-)
This Hokkaido Milky Loaf is a must to try... I recommend you all who like to eat sweet loaf to give a try to bake this bread.

Ingredients:
540g Bread Flour
60g Cake Flour
30g Milk Powder
80gr Sugar
10g Instant Yeast
9g salt
1 pc Egg
250g Fresh Milk
150g whipping cream

Method:
Mixed all ingredients except salt, then knead it until well blended (I use stand mixer, and put it on stuff 1 and took approx. 5 minutes kneading), then add the salt.
Put the mixer in stuff 2, then knead the dough for 8-15 minuten or until you get an elastic & unsticky dough
Place the dough in a bowl, then cover it with wet cloth and let the dough rest for 60 minutes and rise.
Pund the dough to get rid off the gas, then lightly knead it. Shape it in ball form then rest the dough for another 20 minutes.
Divide the dough into 4, then roll each dough out, then roll it up, place it in baking dish and let it rise until 2/3 of baking dish
Preheated the oven into 170C, then sprinkle the top of the dough with egg, bake it for 40 minutes

Ayam Kecap (Chicken in Sweet soja sauce)



We had guests come last week and I cook this dish. Im so happy that they all like it & said that this dish is really delicious ^_^. One of my friend, Marion asked for the recipe. So, I dedicate this recipe for my dear friend Marion :-)

Ingredients:
1 kg chicken (wings, thighs or other parts are ok)
1 big onion, cut in slices
3-4 garlics, cut in slices
2 tomatoes, cut in 4 pcs
2-3 tablespoon sugar
5 tablespoon kecap manis (indonesian sweet soya sauce)
1 teaspoon salt
pepper, generously
about 100ml water

Directions:
- Saute onion, tomatoes & garlic until fragrant then add the chickens & stir until golden brown
- season with sugar, kecap manis, salt & pepper, stir it will & let it cooked until the water comes out, reduce the heat
- when the water starts reducing add water & let it boiled until the chickens are done.
- if you like a lot of sauce then don't let it boil too long (always use medium heat)
- replace the chicken from the heat then serve it warm with rice

Bread-Apple Pudding


When I dropped by at Sefa's home & saw her bread-apple pudding ... I was drooling right away. So, I run to my kitchen and made this pudding rite away ^_^ , hehe..I was lucky coz I got all need in my fridge. The smell from this pudding when it was baked in the oven was sooo tempting..sniff sniff..olala..can't wait to grab & eat it. And...this pudding is sooooo yummyyy. I made a bit change for the ingredients & the way to make it. Thanks a bunch my dearest Sefa!
Ingredients:
8 toast bread (size 9x9cm)
300 ml fresh milk
3 Eggs
3,5 tablespoon sugar (original recipe used 5 tbs sugar)
1 teaspoon cinnamon powder
1 teaspoon vanilla powder ( I use vanilla sugar instead)
1 Apple (granny smith) (I use 2-3 small apples)
raisins
Directions:
- Put egg & milk in a bowl then lightly beaten using whisker.
- Add toast breads & let it soft, beat it slowly with whisker until well blended & become a dough.
- Add sugar, cinnamon & vanilla then stir it well, pour the raisin in the dough.
- Pour the dough in a greased baking/casserole dish, then arranged the apples on top of it.
- baked in preheated oven (180C) for 30-45 minutes

Brown Omelette


This is a very simple & quick food to prepare ^_^, especially when you are so hungry & don' want to wait too long for the food. This one can be a good choice :-)

Ingredients:
4 Eggs
Sweet soya sauce as you desired
2 Shallots or big onion, cut in slices
salt & pepper
butter or oil

Directions:
- mixed all ingredients except oil/butter, beat it using fork until well blended
- heat the skillet & cover it with oil/butter, add 1/4 cup of the batter or as you desired on the hot surface. let it cooked until the bubble come out then flip, cooked until it's brown on the other side.
- serve with warm rice :-)

Colourful Soup


Why is it called as colourful soup? ^_* Well, actually I don't know exactly how to call it as there were so many stuff in it, and i think it's better to call it as it is. But for sure this soup is yummy, healthy and very easy to make :-)

Ingredients:
1 liter water
2 chicken thighs
6 chicken sausages
4 carrots
1 can sweet corn (300gr)
chicken meat balls as you desired
celery stalk

seasoning:
3-5 garlic, bruised & chopped
1 big onion, cut in slices
salt & pepper
sugar
ground nutmeg

Directions:
- boiled water & chicken thighs until the fat from the chicken coming out. Then set aside the chicken, cut it in cubes or as you desired.
- add the garlics & onion and let it boiled, then add the rest ingredients except the chicken & let it boiled. Then add seasoning & stir well.
- at last, add the chicken & boiled it once again.
- Remove the soup from the heat & serve it warm :-)

Jewish Challah



This recipe doesn't use any eggs or milk, but the result is really really soft & moist. Delicious! I got this recipe from my friend Irma :-)

Ingredients:
1 kg Bread Flour
2 Tablespoons Yeast
6 tablespoons sugar
1 tablespoon salt
1/2 cup Oil
450 ml warm water
1 Egg
Sesam seeds

Directions:
- mix all ingredients in a big bowl except Egg & Sesam seeds, then knead it until good smooth dough has been achieved.
- Place the dough in a bowl and let it rise for 1 hour. During 1 hour, punch & knead the dough in every 15 minutes.
- Then, divide dough into your desired amount of loaves then divide each piece into 3 and start braiding
- Place the braids on a baking sheet covered with baking paper
- Brush with egg & then sprinkle with sesam seeds, let it rise for another 30 minutes
- preheated oven for 150 C & bake the braids fo 30 minutes

Spaghetti with Tomato Sauce



Ingredients:
300gr Spaghetti

Tomato Sauce:
500gr ground beef
1 roast paprika, chop in cubes
1 Onion, chop in cubes
500 ml Tomato puree
2 tbsp Tomato paste
salt & pepper
1 small box instant tomato sauce from Maggie

Directions:
- Cook spaghetti in salt water based on the directions from the pack, then set aside
- Heat oil in a pan, then saute onion for 3-5 minutes.
- Add ground beef and paprika in the pan, then stir until mixed
- Add Tomato puree & paste, mixed until well blended and let it boil (reduce the heat)
- Season with pepper & salt
- At the end, add the instant sauce and let it boil for a few minutes
- Serve with Spaghetti
